Good morning….

My wife , Colleen and I bought 70acres in May. She’s always been a city girl. I was raised on a small cattle farm growing up. I moved to the city after high school (to have a better career than what’s in a small town). Little did I know that I would miss farming so much. Fast forward 15yrs., we have a 2 kids that are on their own and an 9yr old. Needless to say after raising the first 2 in the city, I refuse to do that with our 9yr old. So……here we go. Starting our own ranch. We will have updates as we begin this journey. From putting in our crossing, so we can start the build of our house, to fencing, to getting land prepped. All sort of cool adventures. We will discuss what has worked for us and what things did not. Stay tuned……

Cooking can sometimes feel like a chore at the end of a busy day. It’s often tempting to throw a ready meal in the oven or call for take out. But preparing a simple and healthy family meal doesn’t have to be hard or time-consuming. Here are some quick wholesome dishes that you and your family will love. They can even be prepared in advance.

Breakfast at my House

During the week we’re often walking out the door with a coffee in one hand and slice of toast in the other, but on weekends breakfast is never rushed. It’s a late affair, sometimes spilling over to lunch, with lots of reading and chatter in between courses of fruits, poached eggs, honey and toast. One of our favorite things we like to serve when friends are visiting are buckwheat blueberry pancakes.
